Asian spinach is thicker, bigger and has a bitterness, so Japanese don't eat as raw.

-The spinach contains a lot of carotene which promotes cancer prevention and skin health.


-The spinach contains a lot of iron and prevents anemia.


-Rich in minerals that tend to be deficient, such as magnesium, manganese, and zinc.


3; How to store the Asian spinach?

The raw spinach gets dried up pretty easily. Ideally, you want to cook it within a day.

If you are going to keep it, there are 2 ways.


- Keep it as a raw

Wet the news paper or kitchen towel and wrap up the spinach. Put them into the plastic bag and store upright in the refrigerator for a day.


- After blanch the spinach, Cut into bite size and keep them in the airtight container for 3days in a fridge



4; How to blanch the Asian spinach?


The Asian Spinach contains oxalic acid, which is the source of bitterness. We usually remove the oxalic acid before we eat.


<How to blanch the Asian spinach?>

Rinse the spinach. Bring plenty of water to a boil. On a high heat, blanch the stem part first for 20 seconds, then blanch leaf part for another 10 seconds. Transfer onto the ice bath and leave it until it’s cool down. Try not to leave them too long. Squeeze the excess moisture gently.

Yes, you can. Baby spinach has less oxalic acid and not too fibrous.
