Roasted vegetables are obviously not the Japanese food recipe.
However Roasted vegetables are something I make at least once a week in my Japanese family and perfect for the bento box!!!
I especially love the sweet potato!

<ROASTED VEGETABLES/ 野菜のオーブン焼き>
＜Yield> 2-3 servings
<Prep time> 6 mins
<Cook time> 35mins
1 ½ cup of chopped sweet potato
1 cup of chopped carrot
1 cup of chopped zucchini
1 tsp of salt
½ tsp of herb mix
½ tsp of curry powder
3 tbsp of olive oil
1: Preheat the oven to 200℃/ 400F. Chop vegetables into big chunk.
2; On the baking tray, toss 1, salt, dried herb, curry powder and olive oil.
3; Roast 2 in the oven for 35-40mins.Take out from the oven and toss it again. Ready to be served!

・Each oven works differently, so make sure to adjust the roasting time until the veggies are crispy on the outside and inside is fully cooked.
・Use any herb and spices you have on hand!
・Wipe off the excess moisture before you roast the vegetables.
