<SIMMERED MUSHROOMS WITH PICKLED PLUM SAUCE/梅キノコ>

shimeji mushrooms (150g)
6 shiitake mushrooms
enoki mushrooms (100g)
oyster mushroom (100g)
☆Total amount will be about 4 cups of sliced mushrooms.
mirin 1 ½ tbsp
soy sauce1 tbsp
1 cup of dashi ( Mix 1 cup of water + kombu dashi powder1 tsp)
1; Thinly slice shiitake mushrooms and oyster mushrooms. For enoki and shimeji mushrooms, remove the stem and tear into small pieces by hand.
2; Remove the seed of pickled plum and puree them by chopping with a knife.
3; To the pot, add 1. 2 ,mirin, soy sauce and dashi. Cook it over mid heat until all the liquid is evaporated

1; Please use at least 2 different kinds of mushrooms for more flavor.
2; I love to top it on the soba noodle.
Keep it in an air-tight container in the fridge for 7 days.
