I'm dedicating this tomato cold pasta salad recipe to any Tomato lover!!!!

This pasta salad is extremely refreshing. probably one of the most refreshing summery recipe I've ever posted!

You may feel almost drinking the tomato sauce as long as enjoying pasta itself.

I make this when I really feel like not cooking or eating during crazy humid summer in Tokyo.

One of my kind follower told me that this tomato cold pasta is originally a Mexican recipe??

<Yield> 2 servings

<Prep time> 7 mins

<Cook time> 2 mins


angel- hair pasta / somen noodle


fresh basil

Pasta sauce

3-4 large ripe tomato (500g)

2 tbsp of grain mustard

1 tsp of soy sauce

1 tsp of lemon juice

1 tsp of salt

3 tbsp of olive oil

½ tsp of black pepper

(salt for adjustment)

<Optional toppings>

Fresh herb

mozzarella cheese


1: Bring the water to a boil. Remove the tomato stem and score the star shape on the opposite side. Place tomato gently into the boiling water and leave it for 10-30 seconds or until the skin is slightly coming off. Transfer them into the ice bath. Peel the skin of tomatoes.

2; In a large bowl, add 1 and pasta sauces listed above. Puree them with the blender. Refrigerate it for at least 30 mins to be chilled.

3; Cook pasta and let it cool and rinse under the tap water. Drain the water completely.

3; Toss 2 & 3. Adjust the taste with salt and pepper. Serve it on the plate. Garnish sliced avocado, cherry tomato, mozzarella cheese and basil if you want to.

<Miwa's tips>

・You don't want to steep tomatoes too long on process 1.

・2 tbsp of mustard is a little too pungent for kids. Please adjust the taste to your liking.

・You got to have VERY ripe tomato for this pasta!!! This is everything you need for this recipe. haha

・Be sure to chill the pasta & sauce before you serve it. Colder it gets, tastier it becomes.

<Storage time>

Store the noodle and sauce separately in a air-tight container in the fridge for 3 day.
