VEGAN TOFU MAYO / ヴィーガンマヨネーズ
This vegan tofu mayo will go with any type of veggies!
My family is not particularly vegan, but we don't stock regular Japanese mayo anymore since we are satisfied enough with this homemade vegan tofu mayo.
I know exactly what in this vegan tofu mayo! protine packed! still very tasty! What's not to love??
I often mix more miso, vinegar or soy sauce depending on what I eating with using this tofu mayo recipe as a base.

<VEGAN TOFU MAYO/ ヴィーガン豆腐マヨネーズ>
＜Yield> 4 servings
<Prep time> 2 mins
<Cook time> 0 mins
300g of silken tofu
½ tbsp of rice vinegar without MSG
1 tsp of mustard
1 tsp of sugar
½ tbsp of lemon juice
4 tbsp of olive oil
1 tsp of salt
¼ tsp of pepper
1; Put everything in a blender and blitz up until it becomes creamy.

・If the flavor of olive oil is too strong for you, please do half olive oil and half avocado oil.
・Please mix the mayo every time you use since the moisture of tofu might seep out on the surface.
・The texture and taste is relatively light. Great for mixing with other seasoning and condiments like soy sauce and miso.
Store it in a air-tight container in the fridge for 2 weeks.
