Wasabi cucumber

<Yield> 2-3 servings

<Ingredients>

2 cucumber



Seasonings

2 tsp of wasabi paste

11/2 tbsp of soy sauce

1 tbsp of olive oil

1 tsp of honey or sugar



<Optional toppings>

toasted sesame oil

finely chopped leek



<Directions>

1: Sprinkle some salt over cutting board then place cucumber. Start to rub the cucumber by rolling on the cutting board.


1: Make a diagonal slit halfway. However, make sure not to cut it all the way through. Flip the cucumber and repeat the same process.


2:Mix all seasonings listed above.


3:Toss 1 and 2 and ready to be enjoyed!




<Miwa's tips>

・By rubbing cucumber helps to retain its bright green color and to absorb the seasoning more.

・Please adjust the amount of wasabi paste. it’s pretty pageant.

・If you are sensitive to wasabi, leave it for 30mins in the fridge. The taste gets mild when you leave it longer.

・The way of cutting helps to absorb more seasoning + more presentable! haha

However, you can always cut in small chunks as you normally do.

Store it in a air-tight container in the fridge for 3days.
